Fish and Lemonade Food Truck

Fish in the Family (formerly Sydney Seafood fresh) is a family-owned seafood retailer with outlets located within Harris Farm Markets across Sydney. After expanding their business into cooked seafood via the Fish and Lemonade restaurant on Manly Wharf, owner Paul Papacosta approached Bella Manufacturing to build a food truck to complement their growth.

The result is an 8m walk-in mobile commercial kitchen offering an enclosed working space for delicious, fresh seafood to be prepared, cooked and served to hungry customers anywhere across the city. Designed and engineered in-house to customer specifications, this unit has been built to comply with ANZFSA 3.2.3 (food premise design). The custom nature of this project means it features both commercial-grade equipment supplied by Bella, as well as equipment supplied by the customer to be installed during the build in the factory.

Equipment in this food truck includes

• gas conveyor oven
• double pot deep fryers
• bread and batter dump
• chip dump
• lemonade dispensers and slushy units
• under bench fridge/freezers
• an ice maker
• in-built servery bench ice well
• and much more

Internal and servery window strip lighting means service and preparation can take place any time, and external weatherproof floodlights make for a safer outdoor environment when evening falls. With an eye-catching wrap to complement their brand, this project was a pleasure to be involved in.
