Starting your food truck journey is an exciting time, and planning the menu and business strategy are important elements. What is also important is the food truck layout and ensuring it meets safety and compliance requirements.

But there are some elements you as the buyer should be aware of, so you can ask the right questions of your manufacturer and ensure you will receive a compliant, high quality mobile catering unit.
Below, we outline some of the technical specifications your unit will need to adhere to be compliant:
- Ensure your flooring is a commercial vinyl with a rating of R-12 and coves up the wall 150mm. This is important for safety and hygiene.
- Check the cold panels used in construction do not contain the chemical EPS. If they do, some insurers may not cover your mobile business.
- Confirm you will receive a modification certificate and national compliance of your fabrication work.
- The rangehood/exhaust canopy should be custom made to suit your fit out and not be a generic unit. It also must comply with Australian Standards 1668.2, 2012.
- The non-combustible standard is AS/NZS5601.1, Appendix C, and all LPG equipment must be certified by the Australian Gas Association or their approved agents.
Whilst many of these specifications aren’t very exciting, they are extremely important for the safety and durability of your food truck and this knowledge will help when talking with manufacturers or comparing quotes from different providers.
